Easy Peasy Baba Ganoush (vegan eggplant dip)

Enjoy a delicious way to make our tasty eggplants:



Baba Ganoush: 

Ingredients: 

1 eggplant baked then peeled
1/2 cup lemon juice
2 garlic cloves minced
two pinches of salt
1/2 cup Tahini 

Directions:

-Preheat oven to 375 degrees
-Puncture eggplants and roast on baking sheets for 40 minutes or until fork easily slips through
-Remove eggplants from oven and place in an ice bath.
-Remove from ice bath and peel skin off
-Place all ingredients left, including eggplant in food processor or blender and -Blend till no clumps left.
-ENJOY!

USE OUR CELERY

With the excess amount of celery in our fridge here is an option to pair the celery with to turn it into the summer snack you've been craving. 



Celery and Apple Salad: 

Chop one apple into 1/4 inch sticks
Cut two Celery stocks into 1/4 inch thick strips

Dressing:

1/2 teaspoon Dijon mustard
2 tbsp. olive oil 
1 tbsp. lemon juice
crushed roasted nut of choice to taste

Tonights Recipe (4/9/2013)



Sesame Candy Sticks:

Ingredients: 

Vegetable oil or nonstick cooking spray for the pan
2 cups sesame seeds
1/2 cup honey
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Directions:

Coat a 9-inch-square baking pan or dish with oil or non-stick cooking spray; set aside.


-Put the sesame seeds into an ungreased skillet and stir them over medium-high heat for about 5 to 10 minutes, or until they are lightly browned and aromatic.
-Transfer seeds to a bowl
-Bring the rest of the ingredients to a boil in the skillet and heat for two minutes
-Take off heat and add sesame seeds to mixture stirring till mixed.
-Quickly pour the mixture onto a greased baking sheet and with a cold spatula press down mixture to flatten.
-Let cool for 10 minutes and with sharp knife cut into pieces. 


Sweet easy treats: Banana Boats

Have you ever craved something sweet but been bored of plain chocolate chips and ice cream? Here is a way to satisfy your cravings along with pairing the sweets with a healthy option! 

Banana Boats:

Ingredients:

1 Banana
Handful of Chocolate Chips
About a tablespoon of Peanut Butter (or almond butter)
Foil

Directions:

-Cut banana long ways in half without breaking the peal on the bottom side
-Slather peanut butter on both halves
-Place chocolate chips in between the halves
-Close banana
-Place banana in foil and wrap it so it's closed
-Bake on 350 degrees for 15 minutes till chocolate is melted and banana peel is brown.

Recipe of the week!

With summer rolling around and great produce on the way, we wanted to inspire you with an easy to make treat with some of the wonderful goodies you can find in the kitchen! 




Mushroom, apple, goat cheese salad!

Ingredients: 

For the salad

mushrooms, chopped
arugula 
large apple, thinly sliced
goat cheese, crumbled

For the Honey-Balsamic Dressing

1/2 tbsp Dijon mustard
2 tbsp balsamic vinegar
1/4 cup olive oil
1 tbsp honey
1/2 shallot, minced
Salt and pepper to taste

Directions:

-Prepare the vinaigrette. In a small bowl, whisk together olive oil, vinegar and honey. Whisk in shallots and salt and pepper to taste. Set aside.
-Toss together arugula, apple, mushrooms. Transfer to individual serving plates, and sprinkle with goat cheese. Drizzle with honey-balsamic vinaigrette and serve.
